What does the paper test represent?

Paper is made up of celluose. It so happens that the cell walls of plants are also mostly made up of celluose. In other words, if CANNAZYM can break down paper, it will also be able to break cells walls to a large extent. Therefore demonstrating how CANNAZYM can break down dead root matter in the Rhizosphere.

Why do we conduct an apple sauce experiment?

Apple sauce consist of both juice and clusters of cells. The juice represents nutrients that the plant wants and needs to uptake. Because CANNAZYM is able to break down these clusters of cells, it means more juice (or nutrients) becomes available.
